Okay, so, this @beyondmeat sausage is legit. I’m normally not a fan of anything that tastes meaty (haven’t had meat in 13 years I think? 🤔) and much prefer whole food alternatives to meat (lentil walnut taco meat, crispy cauliflower, etc.) BUT this stuff is sooooo tasty! 🎉|| last night I made a sausage, egg, and cheese breakfast sandwich for dinner 🤤 I made a chickpea flour egg patty, sautéed some of the sausage, and toasted a @purelovebakery #glutenfree English muffin. I melted some @followyourheart smoked gouda and added spinach and sriracha! Such a nice break from all the rice and veggies I eat 😂🤷🏼‍♀️
Psssst... are you ready yet? 😍👀✨|| I’ve officially started brewing my own kombucha and I’m SO excited. Now comes the hard part of waiting for it to ferment!

Peanut and I are super excited about finally finding the Beyond Sausage from @beyondmeat! It’s nearly impossible to find #vegan meat alternatives that I can eat (gluten and soy tend to inflame my joints and set off an endo flare) so these have been at the top of my “Must Try” list for a while! So now the important question: what should I make with them?! 🤔🌭
The second stop on our trip to Botswana and Zambia in December was Vumbura Plains, further north along the Okavango Delta in Botswana ✈️ 🇧🇼 || the #vegan food here was a slight letdown from the amazing food I had at Tubu Tree Camp. Lunchtime was the meal with the fewest options for me which was normally the meal that I was most hungry for! For the two dinners here they made me curries and rice and they were all super flavorful and they baked a couple of yummy vegan things like butternut squash muffins and baked gingerbread doughnuts! That was all amazing but I also struggled to trust fully whether the stuff they made me was actually vegan. 😳 All in all there was definitely some good food though!
Oh man, I’ve missed @veggiegalaxy! 💫😩 And going on food adventures with @yaseminkg 😂|| I had their #vegan BLT sandwich on #glutenfree bread with their housemade potato chips and it was all SO good. Just like old times 😭
Meal prep. 🍽📝Kinda sounds boring, right? It’s not the most appealing thing to do on a Sunday morning when I’m still trying to hold onto the weekend and relax from an exhausting work week but I have learned just how important it is for me to stock my fridge with food over the weekend. This sets me up for less stress and anxiety during the week, more time to relax on weekday nights after being on my feet all day each day, and gives me tons of healthy food options that I know are going to make my body feel good || today I made black bean brownies (my absolute favorite recipe is from @detoxinista), banana bread bites, Asian slaw, roasted beets and sweet potatoes, baked falafel, and sautéed green beans. All vegan, all gluten-free, using a lot of my produce from @misfitsmarket! I also have fresh greens in the fridge, brown rice and lentils in the freezer, and chickpeas in my pantry which means I can throw things together in different ways so I’m not bored with what I’m eating 👍🏻
Every Friday for the last few weeks I have been getting a box of organic produce delivered from @misfitsmarket. This company is SO cool - their mission is to sell produce that would otherwise go to waste and their prices are incredibly reasonable 😍🍎🥬 In the grocery stores near me, local and organic produce is pretty expensive and it’s been a huge help to my budget to get a box full of fruits and veggies for only 20ish dollars each week. It also forces me to try new plants that I otherwise wouldn’t buy myself! Since I’ve been battling a super fun head cold this week (🤧😑), I decided to juice a bunch of citrus with some of my leftovers from last week’s box. Here’s to the healing power of plants! 🌱
Today’s high was 8 degrees (😱🥶❄️) soooooo it required French fries right when I got home from work 👍🏻
My obsession with pasta is not going away in 2019 😂🍝|| #vegan #glutenfree fettuccine with a spicy cashew and roasted red pepper sauce, @daiyafoods mozzarella, and more roasted red peppers because why not 🤷🏼‍♀️. So creamy/spicy/slurpy 🤤
