I just really really like plants and I’m amazed by how beautiful they can be 😍🥭🍍|| I’ve always loved pineapple and mango salsa but my disdain of red onion makes pre-made salsa not an option 🙅🏼♀️ For this one I finely diced some pineapple, mango, jalapeño, and cilantro and added some lime juice, sea salt, and chili powder. SO good mixed up in a salad with sweet potatoes, black beans, and spicy jackfruit 🌶
The perfect summer meal = these fresh spring rolls 🤤🥕🥒🥬|| rice noodles, shredded carrots, cucumber, peanuts, and chopped lettuce with cilantro, mint, lime juice, and sesame seeds. Served with a spicy peanut sauce, obviously 👌🏻🥜
Gluten-free pizza crust has always been tricky for me. It normally takes a ton of effort, doesn’t crisp well, and then I’m left feeling disappointed 😔🍕 I finally tried the pre-made dough from my favorite @purelovebakery and it’s a total game changer for me! Both puffy AND crispy 🤯|| I covered it in a cashew cheese sauce, roasted red peppers, basil, @daiya mozzarella, and @beyondmeat spicy sausage. Holy yum! 🤤
Yesterday I felt like garbage. After moping around the house for a while I came to the conclusion that I needed to go to Whole Foods and get one of their TTLA sandwiches (tomato, tempeh bacon, lettuce, and avocado on this amazing ciabatta bread) 😍. It’s one of my very favorite things and yet I try not to get it because gluten and soy are triggers for my joint pain among other things. I told my fiancé (wow, first time writing that 😂😱) and he asked me if I really wanted to go. I said “yes it will make me so happy.” He considered that for a second and then, in such a sweet way, said that I won’t be happy after I eat it and my body is in pain. He was right, of course. Even if it wasn’t what I wanted to hear 😂. So instead I decided to go out and get the ingredients to make my own, on gluten-free bread. Still got the tempeh - because I love it and it doesn’t affect my body as badly as gluten does and I figured it was a compromise. Today I made the sandwich and it was glorious. The end. 🍅🥓🥬🥑
